Fusion Cafe Replaces Coffee Booth!

Chuck Miller and his wife Miracle Miller of Los Alamos are the owner/operators of the brand new "Fusion Cafe and Coffee Roasters" restaurant in Mari Mac Plaza. The Miller's purchased the former "Coffee Booth" from Brian Booth who said it was time to close after operating his restaurant in the 3,000-square-foot space for several years.
Miller said he and his wife will work fulltime in their new restaurant, which is open seven days a week:
- Monday - 6 a.m. to 5 p.m.;
- Tuesday - 6 a.m. to 5 p.m.;
- Wednesday - 6 a.m. to 5 p.m. (8 p.m. beginning Nov. 1);
- Thursday - 6 a.m. to 5 p.m. (8 p.m. beginning Nov. 1);
- Friday - 6 a.m. to 5 p.m. (8 p.m. beginning Nov. 1);
- Saturday - 7 a.m. to 5 p.m. (8 p.m. beginning Nov. 1); and
- Sunday - 7 a.m. to 2 p.m.
"Owning my own restaurant has been a lifelong dream of mine," Miller told the Los Alamos Daily Post. "I've done this successfully for many years for other people and my wife and I decided it was the right time to do this for ourselves."
Miller was born in Los Alamos and left the area for 20 years. He returned two-and-a-half years ago and most recently worked as the executive chef at the Pajarito Brewpub and Grill in Mari Mac Plaza and oversaw start up operations there, he said. Miller and his wife also own Chuck's Wagon, a mobile eatery parked and open for business 7 a.m. to 2 p.m., Monday through Friday across from Ashley Pond in the old Los Alamos Inn parking lot. Chuck's Wagon specializes in breakfast burritos and chili cheese steak sandwiches. Chuck's Wagon also is open for business on site at many community events around Los Alamos and White Rock.
Miller describes his new menu at the Fusion Cafe as "a lighter menu reflecting cafe fare." The restaurant is now full service for breakfast, lunch, and after Nov. 1, dinner. Breakfast includes burritos, eggs benedict and a variety of pancakes. Lunch includes burgers, sandwiches, salads and more. Dinner will include a farm to table rotating menu, Miller said.
"We invite the community to come in and experience our new menu and also to attend our official grand opening event 5-7 p.m., on Nov. 1," Miller said.
Chuck and Miracle Miller live in White Rock with their 10- and 12-year-old sons.
