Fusion Cafe & Coffee Roasters Officially Opens

The Fusion Cafe and Coffee Roaster is officially open for business following Friday's ribbon cutting ceremony hosted by Los Alamos Chamber Manager Katy Korkos.
 
The new eatery in the space formerly occupied by the Coffee Booth in Mari Mac Plaza is owned by Chuck and Miracle Miller of White Rock. The Millers will work fulltime in their new restaurant, which is open seven days a week:
  • Monday - 6 a.m. to 5 p.m.;
  • Tuesday - 6 a.m. to 5 p.m.;
  • Wednesday - 6 a.m. to 5 p.m. (8 p.m. beginning tonight!);
  • Thursday - 6 a.m. to 5 p.m.;
  • Friday - 6 a.m. to 5 p.m.;
  • Saturday - 7 a.m. to 5 p.m.; and
  • Sunday - 7 a.m. to 2 p.m.
Miller describes his new menu at the Fusion Cafe as "a lighter menu reflecting cafe fare." The restaurant is now full service for breakfast, lunch, and beginning tonight - dinner. Breakfast includes burritos, eggs benedict and a variety of pancakes and waffles. Lunch includes burgers, sandwiches, salads and more, Miller said, adding that dinner will include a farm to table rotating menu.
